  • ½ tablespoon nutmeg
  • 5 cups vegetable broth
  • 5 drops ginger essential oil

🍂 Preparation

  1. Preheat your oven to 425°F (220°C).
  2. Grease two baking sheets with coconut oil.
  3. Slice the pumpkins and butternut squash lengthwise (through the stem) and remove all seeds.
  4. Season the cut sides with salt and pepper.
  5. Place the halves facedown on the baking sheets.
  6. Scatter the carrots, onion, and garlic around the squash and bake for 40 minutes until golden and tender.
  7. Remove from the oven and let the vegetables cool slightly.
  8. Scoop out the soft flesh from the pumpkin and squash and transfer it to a high-powered blender.
  9. Add the roasted carrots, onion, garlic, plus the apple, butter, ginger, cinnamon, and nutmeg. Blend until smooth and creamy.
  10. In a large pot, heat the vegetable broth over medium-high heat. Once simmering, stir in the blended mixture until fully combined.
  11. Off the heat, add 5 drops of ginger essential oil, stirring gently to distribute its aroma.
